Eat like a locavore.
My first restaurant job was waiting tables for a massive Tex-Mex chain that will go unnamed (but rhymes with “phillies”). On day one of training, I was given a tour of the restaurant. First stop, the walk-in freezer. Not a walk-in fridge, but a freezer! It was huge, and filled to the brim with non-descript cardboard boxes, adorned with small white labels describing their contents. I quickly learned nearly the entire menu comes in frozen, with an almost infinite shelf life. This makes sense for a giant chain like this, for both price and convenience. But today, with greater demand and knowledge, restaurant guests are wanting, and expecting more from their food.
At Herb & Beet, we’ve opted against the freezer. We’ll have a small freezer for ice cream, and that’s about it. And it doesn’t end there. We’ve created a menu that will focus on local products. Texas is filled with incredible produce, meats, dairy, wines, and much more. So these products are our top priority.
There are many reasons why we prefer eating locally. But most importantly, you are getting produce at it’s peak ripeness, ensuring the highest nutritional value.

When you eat locally, not only does it help the surrounding community, but it makes a global impact. Obviously local food doesn’t have to travel far, so it reduces the usage of fuel and greenhouse gasses. It also limits the amount of waste, from packaging to the food itself.
We believe in serving “responsible” food. This means, as local and fresh as possible. We know where every slice of tomato is from, and how it was grown. We ensure our proteins are sustainable, and humanely treated. We’re proud of what we serve, and proud to be a part of this community.
